About The Scientist

Dr. Mrs. Charlotte Oduro-Yeboah is the Head of the Food Technology Research Division and Principal Research Scientist. Rev. Joseph Oduro-Yeboah is her husband, and they have three children together. She earned a doctorate in food science from the University of Ghana/ CIRAD in Montpellier, France, from 2011 to 2015, a master's degree in food science from the University of Ghana, Legon, from 2002 to 2005, and a bachelor's degree in biochemistry and nutrition from the University of Ghana, Legon, from 1992 to 1996. She has spent the past twenty-one (21) years with the CSIR-Food Research Institute, rising through the ranks from Assistant Research Grade to her current position. From 2016 until 2018, she was the division head of the Food Technology Research Division.

C:AVA Cassava Adding Value to Africa Project(C:AVA). Responsible for training of medium to large Scale processors of HQCF in Volta, Brong Ahafo regions of Ghana. Was part of the team that developed training manuals for HQCF.

CSIR-FRI/GTZ/MOAPP CSIR- Food Research Institute/GTZ/MOAPP Dried Fruits Shelf—Life Studies. Assisted in shelf-life studies of the dried fruits.
2006-2007
CSIR-FRI/EU Cassava SME’S project CSIR-FRI/EU Cassava SME’S project.Developed appropriate quality assurance systems for small and medium scale enterprises processing Root and tubers (cassava SME’S) to provide quality for their products. This was conducted under the CSIR-FRI/EU cassava SME’S project. Trained all the staff of selected SME’S on developed quality systems of their products and food safety management programmes on food processing to ensure safer foods.
